  • 3 stalks celery stalks, sliced
  • 400 grams button mushrooms, sliced
  • 400 grams cremini mushrooms, sliced
  • 2 medium potatoes, diced
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon salt

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

Stir in the minced garlic and cook for another 1 minute until fragrant.

Add the sliced carrots and celery, and cook for an additional 3-4 minutes until they begin to soften.

Add the sliced button and cremini mushrooms to the pot. Sauté for 5-7 minutes until the mushrooms are tender and reduced in size.
