Ingredients

  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 0.75 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chocolate-hazelnut flavored syrup
  • 1 tablespoon Instant coffee granules
  • 0.25 teaspoon Salt
  • 1 teaspoon Gelatin powder

Directions

Step 1

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

Step 2

Add the granulated sugar and stir until it dissolves completely. Remove the saucepan from heat.

Step 3

In a separate small bowl, dissolve the gelatin powder in 2 tablespoons of warm water. Stir well and set aside to bloom for about 5 minutes.

Step 4

Return the milk mixture to low heat, then stir in the bloomed gelatin, vanilla extract, chocolate-hazelnut flavored syrup, instant coffee granules, and salt.

Step 5

Continue stirring until all ingredients are well combined and the gelatin is fully dissolved. Be careful not to bring the mixture to a boil.

Step 6

Remove from heat and let the mixture cool to room temperature.

Step 7

Once cooled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Step 8

Transfer the gelato to an airtight container and freeze for at least 2 hours or until firm.

Step 9

Before serving, let the gelato sit at room temperature for a few minutes to soften slightly for easier scooping.

Step 10

Serve in bowls or cones and enjoy your nut-free hazelnut gelato!
