Ingredients

  • 150 g All-purpose flour
  • 100 g Brown sugar
  • 2 tsp Ground ginger
  • 1 tsp Baking powder
  • 100 g Unsalted butter
  • 2 tbsp Golden syrup
  • 50 g Caster sugar
  • 50 g Crystallized ginger, finely chopped
  • 150 g Icing sugar
  • 1 tsp Ground ginger
  • 2 tbsp Water

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 20x20 cm (8x8 inch) square baking tin with parchment paper.

Step 2

In a medium bowl, combine the all-purpose flour, brown sugar, 2 teaspoons of ground ginger, and baking powder. Mix well.

Step 3

In a small saucepan, melt the unsalted butter and golden syrup over low heat until just combined. Remove from heat and allow to cool slightly.

Step 4

Pour the melted butter and syrup mixture into the dry ingredients, mixing well to form a smooth dough.

Step 5

Press the dough evenly into the prepared baking tin using the back of a spoon or your fingers to ensure an even layer.
