Prepare the vermicelli rice noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process. Set aside.
In a medium bowl, mix together the soy sauce, rice vinegar, honey, lime juice, minced garlic, and grated ginger. This will be your dipping sauce.
Set up your workstation with a clean surface and a large bowl of warm water for softening the rice paper wrappers.
Immerse one rice paper wrapper in the warm water for about 15-20 seconds until it becomes pliable. Remove and lay it flat on your working surface.
In the lower third of the wrapper, place a small handful of noodles, followed by the julienned carrots, cucumber, red bell pepper, shredded cabbage, a few slices of avocado, and a small amount of mint, cilantro, and basil leaves.
