Ingredients

  • 1 large English cucumber
  • 2 cups cherry tomatoes
  • 0.5 medium red onion
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 0.5 cup kalamata olives
  • 0.75 cup feta cheese
  • 0.5 cup fresh parsley
  • 0.25 cup fresh mint
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash all the vegetables thoroughly under cold running water.

Step 2

Slice the English cucumber in half lengthwise and scoop out the seeds with a spoon. Then, chop the cucumber into small, bite-sized pieces.

Halve the cherry tomatoes. If they are large, quarter them.

Thinly slice the red onion and soak in cold water for 5 minutes to reduce its pungency. Drain well.
