Ingredients

  • 50 grams Falooda sev
  • 2 tablespoons Sweet basil seeds (sabja seeds)
  • 500 milliliters Whole milk
  • 4 tablespoons Rose syrup
  • 2 tablespoons Sugar
  • 4 scoops Vanilla ice cream
  • 100 grams Strawberry jelly
  • 8 pieces Ice cubes

Directions

Step 1

Start by soaking the sweet basil seeds. Place the 2 tablespoons of sweet basil seeds in a bowl and cover them with about 1 cup of water. Allow them to soak for at least 20 minutes until they swell up and become gelatinous.

Step 2

In a medium saucepan, bring water to a rolling boil. Add the 50 grams of falooda sev and cook for 4-5 minutes until they are soft. Drain and rinse under cold water. Set aside.

Step 3

Prepare the strawberry jelly according to the package instructions. Once set, cut the jelly into small cubes and set aside.

Step 4

In a large bowl or jug, combine the 500 ml of whole milk and 2 tablespoons of sugar. Stir until the sugar dissolves completely.

Step 5

To assemble the falooda, take 4 serving glasses. Add about 1 tablespoon of rose syrup to the bottom of each glass.

Step 6

Add 2 tablespoons of the swollen and drained sweet basil seeds to each glass.

Step 7

Divide the cooked falooda sev evenly among the glasses.

Step 8

Add 6-8 pieces of jelly cubes to each glass.

Step 9

Pour the sweetened milk into the glasses, filling them up to three-fourths.

Step 10

Add two ice cubes to each glass.

Step 11

Top each glass with a generous scoop of vanilla ice cream.

Step 12

Drizzle about 1 tablespoon of rose syrup over the ice cream in each glass.

Step 13

Serve immediately with a tall spoon and enjoy this chilled, nut-free delight!
