Ingredients

  • 1 medium head Green cabbage
  • 0.5 head Red cabbage
  • 1 large Red bell pepper
  • 2 large Carrot
  • 0.5 cup Cilantro
  • 3 stalks Green onions
  • 2 whole Lime
  • 0.25 cup Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Cumin

Directions

Step 1

Begin by preparing the vegetables: Remove any outer leaves of the green and red cabbage. Halve them and remove the cores. Thinly slice each half into shreds, then place into a large mixing bowl.

Deseed the red bell pepper and slice it into thin strips. Add these to the cabbage.

Step 3

Peel the carrots and shred them using a grater or a food processor. Add to the other vegetables in the bowl.
