Preheat your oven to 180°C (350°F). Grease a 9-inch springform pan lightly with butter.
Mix the flour and salt in a large mixing bowl. Carefully cut in the cold, cubed butter until the mixture resembles coarse crumbs.
Add 100 grams of granulated sugar and mix well. Beat one egg and add it along with the vanilla extract to the flour mixture. Stir until a dough forms.
Wrap the dough in plastic wrap and chill in the refrigerator for at least 15 minutes.
In the meantime, prepare the filling. Peel, core, and slice the apples into thin segments and place them in a mixing bowl.
Add the brown sugar, cinnamon, lemon juice, and cornstarch. Toss everything together until the apple slices are well coated.
Remove the dough from the refrigerator and divide it into two portions: one approximately 2/3 and the other 1/3 of the total dough.
Roll out the larger portion on a floured surface and line the bottom and sides of the springform pan, pressing firmly into place.
Sprinkle the breadcrumbs evenly across the bottom to prevent sogginess. Spoon the apple mixture on top.
Roll out the remaining dough and lattice it over the top of the apple filling.
