  • 2 cups vegetable broth

  • 0.25 teaspoon cayenne pepper
  • 1 cup canned diced tomatoes
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 0.25 cup fresh cilantro, chopped
  • 2 tablespoons olive oil

Directions

Step 1

Rinse the red lentils under cold water until the water runs clear to remove excess starch and impurities.

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until golden brown, about 5 minutes.
