Ingredients

  • 250 grams polenta (coarse cornmeal)
  • 1 liter water
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 50 grams parmesan cheese, grated
  • 0.5 teaspoon black pepper, freshly ground
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon dried oregano
  • 100 milliliters olive oil (for frying)

Directions

Step 1

In a medium saucepan, bring the water to a boil and add the salt.

Gradually whisk in the polenta, reducing the heat to low. Stir continuously for about 10-15 minutes until the mixture thickens and the polenta has softened.

Remove the saucepan from the heat and stir in the olive oil, grated parmesan cheese, black pepper, garlic powder, and oregano.

Line a baking tray with parchment paper and evenly spread the cooked polenta to about 1 cm thickness. Use a spatula to smooth the top.
