Ingredients

  • 2 large chicken breasts
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium onion, finely chopped
  • 1 tablespoon curry powder
  • 1 tablespoon tomato paste
  • 2 tablespoons mango chutney
  • 3 tablespoons plain Greek yogurt
  • 4 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh coriander, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the chicken breasts on a baking sheet. Drizzle with olive oil and season with salt and black pepper.

Step 3

Bake in the preheated oven for 25-30 minutes or until fully cooked through. Remove from oven and let them cool.

Step 4

While the chicken is baking, heat a small saucepan over medium heat and add a bit of oil.

Step 5

Add the finely chopped onion to the saucepan and sauté for about 5 minutes until soft and translucent.

Step 6

Stir in the curry powder and tomato paste, cooking for another 2-3 minutes until fragrant.

Step 7

Remove the saucepan from heat and mix in the mango chutney, combining everything well.

Step 8

In a large bowl, combine the Greek yogurt, mayonnaise, and lemon juice.

Step 9

Add the cooked onion mixture to the yogurt mixture, stirring until well incorporated.

Step 10

Once the chicken is cool enough to handle, chop it into bite-sized pieces.

Step 11

Add the chopped chicken to the bowl with the sauce and mix until the chicken is well coated.

Step 12

Sprinkle the fresh coriander over the chicken and gently mix.

Step 13

Chill the coronation chicken in the refrigerator for at least an hour before serving to allow the flavors to meld together.

Step 14

Serve on a bed of lettuce, in sandwiches, or as part of a salad platter. Enjoy!
