  • 1 tablespoon fresh ginger, minced
  • 1 medium red bell pepper, sliced
  • 2 medium carrot, sliced
  • 1 medium zucchini, sliced
  • 2 tablespoons curry powder

  • 1 teaspoon ground cumin
  • 0.5 teaspoon cayenne pepper (optional)
  • 14 ounces coconut milk
  • 1 cup vegetable broth
  • 1 cup frozen peas
  • 2 cups fresh spinach
  • 1 lime, juiced
  • 0.25 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups cooked jasmine rice, for serving

Directions

Step 1

Heat the coconut oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

Step 2

Add the minced garlic and ginger to the pot, stirring frequently for 1 minute until fragrant.

Pour in the coconut milk and vegetable broth, stirring to combine with the vegetables and spices.

Step 6

Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let it cook for 15 minutes.
