Ingredients

  • 2 cups dried dates, pitted and chopped
  • 1 cup water
  • 0.5 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1.5 cups all-purpose flour
  • 1.5 cups rolled oats
  • 1 cup brown sugar, packed
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, allowing some overhang for easy removal.

Step 2

In a saucepan over medium heat, combine the chopped dates and water. Cook, stirring occasionally, until dates are soft and the mixture is thickened, about 10 minutes.

Step 3

Remove from heat and stir in the granulated sugar and lemon juice. Set aside to cool slightly.

Step 4

In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, baking soda, and salt. Pour in the melted butter and mix until crumbly.

Press half of the oat mixture into the prepared baking pan to form an even layer.
