Ingredients

  • 100 grams Unsalted butter
  • 180 grams Granulated sugar
  • 3 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Almond extract
  • 300 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 1 pinch Salt
  • 100 grams Chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, cream the butter and sugar together until light and fluffy.

Step 3

Add the eggs one at a time, beating well after each addition. Mix in the vanilla and almond extracts until combined.

Step 4

In a separate bowl, whisk together the flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. If using, fold in the chocolate chips until evenly incorporated.

Step 6

Divide the dough into two equal portions and shape each portion into a log about 12 inches long and 2 inches wide. Place the logs onto the prepared baking sheet.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the logs are lightly golden and firm to the touch. Remove from the oven and let cool for about 10 minutes.

Step 8

Reduce the oven temperature to 300°F (150°C).

Step 9

Using a serrated knife, slice the logs diagonally into 3/4-inch thick slices.

Step 10

Arrange the slices back on the baking sheet, cut sides up, and bake for an additional 15 minutes to dry them out, flipping halfway through.

Step 11

Allow the cantuccini to cool completely on a wire rack before serving. Store in an airtight container to maintain their crispness.
