Ingredients

  • 200 grams Tapioca flour
  • 50 grams All-purpose flour
  • 2 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 2 stalks Scallions
  • 300 milliliters Water
  • 500 milliliters Vegetable oil
  • 2 tablespoons Sweet soy sauce
  • 2 pcs Bird's eye chili (optional)

Directions

Step 1

Begin by finely mincing the garlic cloves and slicing the scallions thinly. If using bird's eye chili, chop them finely as well.

Step 2

In a medium bowl, combine the tapioca flour, all-purpose flour, minced garlic, chopped scallions, chopped chili (if using), salt, and white pepper.

Step 3

Gradually add water to the dry ingredients, stirring continuously until a thick, smooth batter is formed. The consistency should be similar to a thick pancake batter. Add more water if necessary.

Step 4

In a large, deep skillet or wok, heat vegetable oil over medium heat. To test if the oil is ready, drop a small piece of batter into the oil. If it sizzles and rises to the surface immediately, the oil is hot enough.

Step 5

Using a spoon or your hands, take small portions of batter and gently drop them into the hot oil. The fritters should be about 2 inches in diameter.

Step 6

Fry the fritters in batches to avoid overcrowding the pan. Cook each side until golden brown and crisp, about 3-4 minutes per side.

Step 7

Once cooked, remove the fritters from the oil with a slotted spoon and drain them on a plate lined with paper towels.

Step 8

Serve the hot Cireng with sweet soy sauce for dipping. Enjoy them crispy and warm!
