Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.75 cup granulated sugar
  • 0.25 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup vegetable oil
  • 0.25 cup unsweetened applesauce
  • 1.5 cups zucchini, grated and squeezed of excess moisture
  • 1 cup semisweet chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.

Step 2

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

Step 3

In a separate medium bowl, beat together the granulated sugar, brown sugar, and eggs until well combined.

Step 4

Add in the vanilla extract, vegetable oil, and applesauce to the sugar and egg mixture. Mix until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.

Step 6

Fold in the grated zucchini and chocolate chips until evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared loaf pan, spreading it evenly.

Step 8

Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 9

Once baked, allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Step 10

Slice and serve the zucchini bread as a warm, nut-free treat.
