Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon curry powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 0.5 cup sunflower seed butter
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon fish sauce
  • 0.25 cup water
  • 2 tablespoons fresh cilantro, chopped
  • 12 pieces bamboo skewers

Directions

Step 1

Soak the bamboo skewers in water for at least 30 minutes to prevent them from burning during grilling.

Step 2

Slice the chicken breasts into thin strips, approximately 1 inch wide.

Step 3

In a large bowl, combine coconut milk, soy sauce, brown sugar, ground coriander, ground turmeric, curry powder, salt, black pepper, minced garlic, and minced ginger.

Step 4

Add the chicken strips to the marinade and mix well to coat the chicken evenly. Cover and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Step 5

Preheat the grill to medium-high heat.

Step 6

Thread the marinated chicken strips onto the soaked bamboo skewers.

Step 7

Grill the chicken skewers for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice char marks.

Step 8

While the chicken is grilling, prepare the nut-free satay sauce. In a small saucepan, combine sunflower seed butter, lime juice, honey, fish sauce, and water.

Step 9

Heat the mixture over low heat, whisking continuously until smooth and slightly thickened. If the sauce is too thick, add a bit more water to reach your desired consistency.

Step 10

Remove the grilled chicken skewers from the grill and transfer them to a serving platter.

Step 11

Garnish the chicken satay with chopped cilantro.

Step 12

Serve immediately with the sunflower seed butter sauce on the side for dipping.
