  • 2 tablespoons lemon juice
  • 0.5 cup extra virgin olive oil
  • 400 grams pasta (penne or fusilli)
  • 1 cup cherry tomatoes
  • 2 cups spinach leaves

Directions

Step 1

Begin by cutting the chicken breasts into thin strips. Season them with salt and black pepper.

Step 2

In a large skillet over medium heat, add 1 tablespoon of olive oil. Sauté the chicken strips until they're golden and fully cooked, approximately 8-10 minutes. Remove chicken from the skillet and set aside.

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve one cup of pasta water, then drain the rest.
