Ingredients

  • 300 grams pitted dates
  • 125 grams unsalted butter
  • 100 grams light brown sugar
  • 50 grams granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

Chop the pitted dates into small pieces and set them aside.

Step 3

In a large mixing bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until the mixture is light and fluffy.

Step 4

Add the eggs one at a time, beating well after each addition, and then mix in the vanilla extract.

Step 5

In another bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 7

Fold in the chopped dates gently until evenly distributed throughout the dough.

Step 8

Using a tablespoon or cookie scoop, drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 9

Bake in the preheated oven for 10-12 minutes or until the cookies are golden brown around the edges but still soft in the center.

Step 10

Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
