Ingredients

  • 200 grams Rice flour
  • 50 grams Tapioca starch
  • 50 grams Potato starch
  • 700 ml Water
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 4 tablespoons Soy sauce
  • 2 tablespoons Hoisin sauce
  • 1 teaspoon Sesame oil
  • 2 stalks Spring onion

Directions

Step 1

In a large mixing bowl, combine rice flour, tapioca starch, and potato starch.

Step 2

Gradually add 700 ml of water while whisking to ensure a smooth batter. Set aside for 15 minutes to rest.

Step 3

Add vegetable oil and salt to the rested batter, and mix well again.

Step 4

Prepare a steaming setup: fill a large pot with some water and place a steaming rack inside. Ensure the water level is below the rack. Bring water to a boil.

Step 5

Lightly oil a flat, round stainless steel or glass tray that fits inside the pot.

Step 6

Pour a thin layer of batter onto the tray, just enough to cover the bottom, and place it onto the steaming rack.

Step 7

Cover the pot with a lid and steam for about 4-5 minutes or until the noodle sheet turns translucent.

Step 8

Remove the tray carefully using tongs and let it cool slightly. Use a spatula to gently lift and roll the noodle sheet into a long roll. Transfer to a plate.

Step 9

Repeat the steaming process with the remaining batter.

Step 10

For the sauce, mix soy sauce, hoisin sauce, and sesame oil in a small bowl.

Step 11

Chop spring onions finely and sprinkle over the rolled noodles.

Step 12

Drizzle the sauce over the rolled noodles before serving.

Step 13

Enjoy your nut-free Chee Cheong Fun served hot or warm.
