Ingredients

  • 3 cups cold cooked white rice
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 unit medium carrot, diced
  • 0.5 cup green peas, frozen
  • 0.5 unit red bell pepper, diced
  • 3 sticks green onions, chopped
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 units eggs, beaten
  • 0.5 teaspoon salt
  • 0.25 teaspoon white pepper

Directions

Step 1

Begin by preparing all your ingredients. Dice the carrot and red bell pepper, chop the green onions, and mince the garlic.

Step 2

In a large non-stick pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the beaten eggs and scramble them until just cooked. Remove the eggs from the wok and set aside.

Step 3

Add the remaining 1 tablespoon of vegetable oil to the wok and allow it to heat up. Add the minced garlic and stir-fry for about 30 seconds until fragrant.

Step 4

Add the diced carrot and red bell pepper to the wok and stir-fry for 3 minutes, or until they begin to soften.

Step 5

Add the frozen green peas and continue to stir-fry for another 2 minutes.

Step 6

Increase the heat to high and add the cold cooked white rice to the pan. Use a spatula to break up any clumps of rice, ensuring it's evenly distributed with the vegetables.

Step 7

Drizzle the soy sauce and sesame oil over the rice and vegetables. Toss everything together to combine thoroughly, sautéing for about 2 minutes until the rice is heated through.

Step 8

Add the scrambled eggs back into the wok along with the chopped green onions. Toss to mix, breaking the eggs into small pieces.

Step 9

Season with salt and white pepper to taste, and give the chao fan a final toss to ensure all ingredients are well distributed.

Step 10

Serve the nut-free chao fan hot, garnished with additional green onions if desired.
