  • 1 cup Whole wheat flour
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Salt
  • 1.5 cups Carrots, finely grated
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Maple syrup
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins
  • 0.5 cup Sunflower seeds

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, whole wheat flour, baking soda, ground cinnamon, ground ginger, and salt. Stir until well mixed.

In another bowl, whisk together the finely grated carrots, unsweetened applesauce, maple syrup, eggs, and vanilla extract until smooth.
