Peel and dice the potatoes into small cubes. Boil them in salted water over medium heat until tender, about 15-20 minutes. Drain and mash the potatoes in a large bowl.
While the potatoes are cooking, finely chop the shallots and garlic.
In a separate pan, heat a tablespoon of vegetable oil over medium heat. Sauté the shallots and garlic until fragrant, approximately 3-4 minutes.
