Ingredients

  • 3 medium-sized beetroot
  • 1 can (400g) chickpeas
  • 1 cup rolled oats
  • 1 medium red onion
  • 2 large garlic cloves
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Peel the beetroots and grate them using a box grater or food processor. Set aside.

Drain and rinse the chickpeas thoroughly, then mash them using a fork or potato masher in a large mixing bowl.
