Ingredients

  • 6 large green bell peppers
  • 2 medium habanero peppers
  • 2 large onions
  • 4 large garlic cloves
  • 1 inch piece ginger
  • 1 cup vegetable oil
  • 2 pounds beef (or protein of choice)
  • 2 cups beef stock
  • 1 tablespoon bouillon powder
  • 1 teaspoon dried thyme
  • 1 tablespoon ground crayfish
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the beef into bite-sized pieces and season with salt and black pepper. Set aside.

Step 2

Roughly chop the green bell peppers, onions, habanero peppers, garlic, and ginger.

Step 3

In a blender, combine the green bell peppers, habanero peppers, half of the onions, garlic, and ginger. Blend until smooth.

Step 4

Strain the blended pepper mix using a fine sieve to remove excess water and create a thick paste.

Step 5

In a large pot, heat the vegetable oil over medium heat until hot.

Step 6

Add the remaining chopped onions to the hot oil and fry until golden brown.

Step 7

Carefully add the strained pepper mixture into the pot and fry it, stirring regularly to avoid burning. This should take about 20 minutes until the mixture is dark green and the oil begins to separate.

Step 8

Add the beef pieces into the pot and stir well. Cook until the beef is browned on all sides.

Step 9

Pour in the beef stock and add the bouillon powder, dried thyme, and ground crayfish. Mix well to combine all ingredients.

Step 10

Reduce the heat to low, cover the pot, and let the stew simmer for 60 minutes, stirring occasionally.

Step 11

Taste and adjust seasoning with additional salt or pepper if needed.

Step 12

Serve the Nut-Free Ayamase stew hot over steamed rice or with your choice of complementary side.
