  • 6 pieces chicken thighs
  • 400 ml coconut milk
  • 1 piece lemongrass stalk
  • 3 leaves kafir lime leaves
  • 1 inch ginger
  • 1 inch galangal
  • 4 pieces shallots
  • 4 pieces garlic cloves
  • 1 teaspoon turmeric powder
  • 2 teaspoons salt
  • 0.5 teaspoon white pepper
  • 1 tablespoon lime juice
  • 2 tablespoons vegetable oil
  • 200 ml water

Directions

Step 1

Begin by preparing the chicken. Rinse and pat dry the chicken thighs. Set aside.

Slice the lemongrass stalk thinly and peel and grate the ginger and galangal.

Step 3

Peel the shallots and garlic, then blend them together with the sliced lemongrass, grated ginger, and galangal into a smooth paste using a food processor or a mortar and pestle.

Heat the vegetable oil in a large pot over medium heat. Add the spice paste and sauté until fragrant, about 3-4 minutes.

Add the turmeric powder, salt, and white pepper to the pot, followed by the chicken thighs. Stir to coat the chicken with the spices.
