Ingredients

  • 1 kg Chicken thigh pieces

  • 1 teaspoon Fennel seeds
  • 2 teaspoons Salt
  • 30 grams Ginger
  • 5 cloves Garlic
  • 2 Lemongrass stalks
  • 4 Shallots
  • 100 grams Rice flour
  • 50 grams Cornstarch
  • 1 Egg
  • 100 ml Water
  • 500 ml Oil for frying

Directions

Step 1

Start by cleaning the chicken thigh pieces and pat them dry with paper towels.

Step 2

In a blender, combine the ginger, garlic, lemongrass stalks, and shallots. Blend into a smooth paste.

Step 3

In a large bowl, mix the turmeric powder, chili powder, coriander powder, cumin powder, fennel seeds, and salt together.

Add the blended paste to the spice mix and combine thoroughly.

Marinate the chicken thighs with the spice paste, ensuring each piece is well coated. Let it marinate for at least one hour in the refrigerator for best results.
