Ingredients

  • 2 tablespoons Vegetable oil
  • 400 ml Coconut milk (unsweetened, full-fat)
  • 500 grams Chicken breast, sliced
  • 1 medium Onion, sliced
  • 1 medium Red bell pepper, sliced
  • 3 tablespoons Thai red curry paste (nut-free)
  • 2 tablespoons Fish sauce
  • 1 tablespoon Soy sauce (ensure nut-free)
  • 2 teaspoons Brown sugar
  • 4 pieces Lime leaves
  • 1 cup Fresh basil leaves
  • 2 tablespoons Chopped cilantro
  • 3 cups Jasmine rice, cooked

Directions

Step 1

Heat the vegetable oil in a large saucepan or wok over medium heat.

Step 2

Add the sliced onion and sauté for 2-3 minutes until it begins to soften.

Stir in the Thai red curry paste and cook for 1-2 minutes until fragrant.

Add the sliced chicken breast to the pan and cook for 5-6 minutes, stirring frequently, until the chicken is mostly cooked through.
