Ingredients

  • 2 cups old-fashioned rolled oats
  • 0.75 cup whole wheat flour
  • 0.5 cup coconut sugar
  • 0.25 cup ground flaxseed
  • 2 tablespoons chia seeds
  • 0.5 cup pumpkin seeds
  • 0.25 cup sunflower seeds
  • 0.5 cup dried apricots, finely chopped
  • 0.5 cup dried cranberries
  • 0.5 cup shredded unsweetened coconut
  • 0.5 cup unsalted butter, melted
  • 0.25 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin with non-stick cooking spray.

Step 2

In a large bowl, mix together the rolled oats, whole wheat flour, coconut sugar, ground flaxseed, chia seeds, pumpkin seeds, sunflower seeds, chopped dried apricots, dried cranberries, and shredded coconut.

Step 3

In a separate bowl, whisk together the melted butter, honey, vanilla extract, baking soda, and salt until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and mix until everything is evenly coated and the mixture holds together when pressed.

Step 5

Spoon the mixture into the prepared mini muffin tin, filling each cup to the top and pressing down firmly with the back of a spoon to ensure they stick together.

Step 6

Bake in the preheated oven for 8-10 minutes, or until lightly golden on top.

Step 7

Remove from oven and allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Step 8

Store the Nut-Free Aussie Bites in an airtight container at room temperature for up to a week, or in the fridge for longer freshness.
