Ingredients

  • 2 cups Wheat berries
  • 1 cup Dried apricots
  • 1 cup Dried figs
  • 0.5 cup Raisins
  • 0.5 cup Currants
  • 1 cup Canned chickpeas
  • 1 cup Canned white beans
  • 1.5 cups Granulated sugar
  • 12 cups Water
  • 1 cup Pomegranate seeds
  • 2 teaspoons Ground cinnamon
  • 0.25 teaspoons Salt
  • 1 tablespoon Orange zest

Directions

Step 1

Rinse the wheat berries under cold water until the water runs clear.

Step 2

In a large pot, combine the wheat berries and 8 cups of water. Bring to a boil and cook for about 1 hour, or until the wheat berries are tender.

Step 3

Drain and rinse the canned chickpeas and white beans. Set aside.

Step 4

Cut the dried apricots and dried figs into small pieces.

Step 5

Once the wheat berries are tender, add the remaining 4 cups of water, dried apricots, dried figs, raisins, currants, chickpeas, white beans, and salt to the pot.

Step 6

Bring the mixture to a boil again and then reduce the heat to medium. Cook for about 30 minutes, stirring occasionally.

Step 7

Add the granulated sugar and orange zest. Continue to cook for another 30 minutes, stirring occasionally to ensure the sugar dissolves completely.

Step 8

The mixture should thicken and become creamy. You can add more water if a thinner consistency is desired.

Step 9

Remove the pot from heat and let the pudding cool slightly.

Step 10

Ladle the Asure into individual serving bowls.

Step 11

Top with pomegranate seeds and a sprinkle of ground cinnamon.

Serve the Asure warm or at room temperature.
