Ingredients

  • 1 cup Rice
  • 0.25 cup Split black gram (urad dal)
  • 2 tablespoons Flattened rice (poha)
  • 0.5 teaspoons Fenugreek seeds
  • 1 teaspoon Salt
  • 1.5 cups Water
  • 2 tablespoons Oil

Directions

Step 1

Rinse and soak the rice in water for 6-8 hours or overnight.

Step 2

Separately, rinse and soak the urad dal and fenugreek seeds together for 6-8 hours or overnight.

Step 3

Just an hour before grinding, rinse and soak poha in water for 1 hour.

Step 4

Drain the water from the soaked rice and blend it with 3/4 cup of water until smooth. Transfer to a large mixing bowl.

Step 5

Drain the urad dal and fenugreek seeds, and blend them with 1/2 cup of water until creamy. Add this to the rice batter.

Step 6

Blend the soaked poha with 1/4 cup of water until smooth and add to the mixing bowl.

Step 7

Mix the blended ingredients thoroughly, cover the bowl, and allow the batter to ferment in a warm place for 8-10 hours or overnight, until it doubles in size.

Step 8

Once fermented, add salt to the batter and mix gently.

Step 9

Heat an appe pan and add a drop of oil into each cavity.

Step 10

Pour batter into each cavity, filling them about three-quarters full.

Step 11

Cover and cook on medium heat for 3-4 minutes until golden brown on the bottom.

Step 12

Using a skewer or spoon, carefully turn each appe over and cook for another 2-3 minutes until golden brown on the other side.

Step 13

Repeat with the remaining batter, adding oil as needed.

Step 14

Serve hot with coconut chutney or sambar.
