Ingredients

  • 150 grams Caster sugar
  • 3 large Egg whites
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Almond essence (nut-free alternative)
  • 200 grams Rice flour
  • 50 grams Icing sugar
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 160°C (320°F) and line a baking tray with parchment paper.

Step 2

In a clean, dry bowl, whisk the egg whites until soft peaks form using an electric mixer on medium speed.

Step 3

Gradually add the caster sugar to the egg whites, one tablespoon at a time, continuing to whisk until the mixture forms stiff peaks and becomes glossy.

Step 4

Stir in the vanilla extract and almond essence into the meringue mixture.

Step 5

Sift the rice flour and a pinch of salt together in a separate bowl. Gradually fold this into the meringue mixture using a spatula, being careful not to deflate the egg whites.

Using a spoon or piping bag, drop small, heaped teaspoons of the mixture onto the prepared baking tray, leaving about 2 cm (about 1 inch) of space between each.

Sift the icing sugar lightly over each biscuit before baking.
