  • 1 medium Onion, chopped
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 tablespoons Tomato paste
  • 14 ounces Canned diced tomatoes
  • 2 cups Chicken broth
  • 0.5 cup Sunflower seed butter
  • 0.25 teaspoon Cayenne pepper
  • 2 medium Sweet potatoes, peeled and cubed
  • 6 ounces Fresh spinach
  • 0.25 cup Fresh cilantro, chopped
  • 1 medium Lime, cut into wedges

Directions

Step 1

Season the chicken thighs with salt and pepper.

Step 2

Heat the olive oil in a large pot over medium-high heat. Add the chicken and brown on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.

In the same pot, add the chopped onion and sauté until softened, about 4 minutes.
