Rinse the basmati rice under cold water until the water runs clear. This will help remove excess starch and prevent the rice from sticking together too much.
Soak the yellow mung beans in warm water for about 30 minutes, then drain and set aside.
In a large pot, add the water and bring it to a boil over high heat.
Add the mung beans to the boiling water and reduce the heat to medium. Cook the mung beans until they are tender but not mushy, approximately 10-12 minutes. Drain and set aside.
In a large pan, heat the canola oil over medium heat. Add the finely chopped onion and sauté until it is golden brown.
Add the ground turmeric, cumin, coriander, salt, and black pepper to the onions. Stir and cook for about 1 minute until the spices are fragrant.
Add the drained rice to the onion mixture and stir gently to coat the rice with the spices and oil.
Gradually add the cooked mung beans and chopped spinach, stirring delicately to combine all ingredients.
Pour in 4 cups of water and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 20-25 minutes, or until the rice is fully cooked and the water is absorbed.
Remove the pan from the heat and let it sit, covered, for another 10 minutes to allow the flavors to meld and the rice to become sticky.
Fluff the rice gently with a fork and stir in the fresh chopped cilantro before serving.
Serve hot as a standalone dish or as a side to complement your favorite meals.
