Ingredients

  • 230 grams Unsalted butter
  • 200 grams Granulated sugar
  • 4 large Eggs
  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Ground nutmeg
  • 0.5 teaspoons Ground cinnamon
  • 120 milliliters Milk
  • 150 grams Dried currants or raisins
  • 100 grams Chopped almonds
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9-inch (23 cm) round cake pan. Line the bottom with parchment paper for easy removal.

Step 2

In a large mixing bowl, cream the butter and granulated sugar together using a hand or stand mixer on medium speed until light and fluffy, about 3-4 minutes.

Step 3

Add the eggs one at a time, beating well after each addition to ensure they are fully incorporated.

Step 4

In a separate bowl, sift together the all-purpose flour, baking powder, ground nutmeg, ground cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients, mixing gently after each addition to avoid overmixing.

Step 6

Fold in the dried currants or raisins, chopped almonds, and vanilla extract using a spatula.

Step 7

Pour the batter into the prepared cake pan, smoothing the top evenly with a spatula.

Step 8

Bake in the preheated oven for 55-60 minutes, or until a skewer inserted into the center of the cake comes out clean.

Step 9

Allow the cake to cool in the pan for 10 minutes, then invert it onto a cooling rack. Remove the parchment paper and let it cool completely before serving.

Step 10

Slice and enjoy your Nun's Cake with a cup of tea or coffee. Store leftovers in an airtight container for up to 4 days.
