Ingredients

  • 250 grams Pasta (medium-sized shells or fusilli)
  • 200 grams Cherry tomatoes

  • 1 medium Red bell pepper

  • 100 grams Feta cheese
  • 50 grams Black olives
  • 2 tablespoons Fresh parsley
  • 3 tablespoons Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Wash and halve the cherry tomatoes. Peel the cucumber and cut it into small cubes. Dice the red bell pepper and finely chop the red onion.
