Ingredients

  • 2.5 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoons salt
  • 0.5 cup unsalted butter, cold and cubed
  • 1 unit large egg
  • 0.75 cup whole milk
  • 1 teaspoon vanilla extract
  • 0.5 cup optional: raisins, currants, or dried cranberries

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the egg, milk, and vanilla extract.

Step 5

Gradually pour the wet ingredients into the dry ingredients, stirring gently with a fork until just combined. Do not overmix.

Step 6

If you’re using raisins, currants, or dried cranberries, fold them into the dough at this stage.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a round disk about 1 inch thick.

Step 8

Using a sharp knife, cut the disk into 8 equal wedges. Transfer the wedges to the prepared baking sheet, leaving space between each scone.

Step 9

Optional: Brush the tops of the scones with a little milk or heavy cream for a golden finish.

Step 10

Bake the scones in the preheated oven for 15–18 minutes, or until they are golden brown and cooked through.

Step 11

Remove the scones from the oven and allow them to cool on a wire rack for a few minutes before serving.

Step 12

Serve warm with butter, jam, or clotted cream, and enjoy!
