Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1.5 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.75 cup Granulated sugar
  • 0.5 cup Brown sugar (packed)
  • 0.5 cup Vegetable oil
  • 0.25 cup Unsweetened applesauce
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 2 cups Fresh zucchini (shredded, about 2 medium zucchini)
  • 1 teaspoon Orange zest
  • 0.5 cup Chopped walnuts (optional)
  • 0 Cooking spray or butter (for greasing the pan)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray or butter, and line it with parchment paper for easier removal.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until combined.

Step 3

In a separate large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, and unsweetened applesauce until smooth and well incorporated.

Step 4

Add the eggs and vanilla extract to the wet ingredients, whisking until fully combined.

Step 5

Gently fold in the shredded zucchini and orange zest into the wet mixture using a spatula.

Step 6

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. Fold in the chopped walnuts, if using.

Step 7

Pour the batter into the prepared loaf pan, spreading it evenly to the edges.

Step 8

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Step 9

Remove the zucchini bread from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Step 10

Once cool, slice and serve. Enjoy this deliciously moist zucchini bread on its own or with a smear of butter!
