Ingredients

  • 1.5 pounds ground beef (80/20)
  • 0.5 pounds ground pork
  • 1 cup panko breadcrumbs
  • 0.5 cup whole milk
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 0.25 cup ketchup
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 count large eggs
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons paprika
  • 0.5 cup ketchup (for glaze)
  • 2 tablespoons brown sugar (for glaze)
  • 1 tablespoon apple cider vinegar (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.

Step 2

In a small mixing bowl, combine the panko breadcrumbs and milk. Let sit for 5 minutes to allow the breadcrumbs to soak up the milk.

Step 3

In a large skillet over medium heat, sauté the diced onion in a small drizzle of olive oil until softened, about 4-5 minutes. Add minced garlic and cook for an additional 1-2 minutes, stirring frequently. Remove from heat and let cool slightly.

In a large bowl, combine the ground beef and ground pork. Add the soaked breadcrumbs, cooled onion and garlic mixture, Worcestershire sauce, Dijon mustard, ketchup, chopped parsley, chopped thyme, eggs, kosher salt, black pepper, and paprika.

Use your hands or a large spoon to mix the ingredients together until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Transfer the mixture to the prepared baking sheet and shape it into a loaf approximately 9 inches long and 4 inches wide.

Step 7

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze. Spread half of the glaze evenly over the top and sides of the meatloaf.

Step 8

Bake the meatloaf in the preheated oven for 40 minutes. Remove from oven, spread the remaining glaze over the top, and return to the oven for an additional 20 minutes, or until the internal temperature reaches 160°F (71°C).

Step 9

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm with your favorite sides.
