Ingredients

  • 2 pounds Russet potatoes
  • 6 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 3 pieces Garlic cloves, minced
  • 3 ounces Parmesan cheese, grated
  • 0.5 cup Sour cream
  • 2 tablespoons Fresh chives, chopped
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper, freshly ground

Directions

Step 1

Peel the russet potatoes and cut them into roughly 1-inch cubes for even cooking.

Step 2

Place the potato cubes in a large pot and cover them with cold water by about 1 inch. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes cook, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 2-3 minutes, stirring frequently, until fragrant but not browned. Remove from heat and stir in the heavy cream.

Step 5

Drain the cooked potatoes and return them to the pot. Allow them to sit uncovered for 2-3 minutes to let excess steam escape.

Step 6

Using a potato masher or ricer, mash the potatoes to your desired texture.

Step 7

Gradually mix in the butter and cream mixture, ensuring the potatoes are evenly coated and creamy.

Step 8

Stir in the grated Parmesan cheese and sour cream until fully incorporated.

Step 9

Season the mashed potatoes with the remaining teaspoon of salt and freshly ground black pepper. Adjust seasoning to taste.

Step 10

Transfer the mashed potatoes to a serving dish and garnish with chopped fresh chives. Serve warm and enjoy!
