Ingredients

  • 1 pound Brussels sprouts
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 0.25 cup Pecans (optional, toasted)
  • 0.25 cup Parmesan cheese (optional, grated)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 2

Wash and dry the Brussels sprouts. Trim the ends and remove any yellow outer leaves, then cut each sprout in half lengthwise.

Step 3

In a large mixing bowl, whisk together olive oil, balsamic vinegar, honey, smoked paprika, garlic powder, kosher salt, black pepper, and crushed red pepper flakes (if using).

Step 4

Add the halved Brussels sprouts to the bowl and toss until they are evenly coated with the seasoning mixture.

Step 5

Spread the Brussels sprouts in a single layer on the prepared baking sheet, cut side down for maximum caramelization.

Step 6

Roast in the preheated oven for 20-25 minutes, or until the edges are crispy and browned and the centers are tender. Stir halfway through cooking for even browning.

Step 7

Optional: While the Brussels sprouts are roasting, toast the pecans in a dry skillet over medium heat for 3-5 minutes until fragrant and lightly browned.

Step 8

Remove the Brussels sprouts from the oven. If using, sprinkle toasted pecans and grated Parmesan cheese over the top before serving.

Step 9

Serve immediately and enjoy these crispy, flavor-packed Brussels sprouts that will make you forget about the soggy ones from childhood!
