Ingredients

  • 1 cup All-purpose flour
  • 1 cup Wheat bran
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.75 cup Unsweetened applesauce
  • 0.5 cup Honey
  • 0.75 cup Milk (dairy or plant-based)
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins (optional)
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease each cup.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, wheat bran, baking soda, salt, and ground cinnamon.

Step 3

In a separate medium-sized bowl, combine the applesauce, honey, milk, egg, and vanilla extract. Whisk until the mixture is smooth and well-combined.

Step 4

Make a well in the center of the dry ingredients and pour the wet mixture into it. Stir gently with a spatula or wooden spoon until just combined. Do not overmix as this may result in dense muffins.

Step 5

If you're adding raisins or chopped walnuts, fold them into the batter at this point.

Step 6

Using a spoon or an ice cream scoop, evenly distribute the batter into the prepared muffin tins, filling each cup about 3/4 full.

Step 7

Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Enjoy these muffins warm, or store them in an airtight container at room temperature for up to 3 days. They also freeze well for longer storage!
