Ingredients

  • 2 pounds ground beef (80% lean)
  • 1 pound ground pork
  • 8 ounces bacon, diced
  • 1 cup cheddar cheese, shredded
  • 1 cup ricotta cheese
  • 1 yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1.5 cups breadcrumbs
  • 0.5 cup whole milk
  • 2 large eggs
  • 0.75 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x5-inch loaf pan with non-stick spray or line it with parchment paper for easy removal.

Step 2

In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of the bacon fat in the skillet.

Add the chopped onion to the skillet and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute. Remove from heat and let cool slightly.

Transfer the meat mixture into the prepared loaf pan, pressing it down gently to shape it evenly.

In a small bowl, mix together the ketchup, brown sugar, and an optional splash of Worcestershire sauce to make the glaze. Spread the glaze evenly over the top of the meatloaf.

Place the loaf pan on the middle rack of the preheated oven and bake for 75-90 minutes, or until an instant-read thermometer inserted into the center reads 160°F (71°C).

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute and makes it easier to slice.
