Ingredients

  • 100 grams Granulated sugar
  • 75 grams Small pearl tapioca
  • 500 milliliters Water
  • 400 grams Fresh strawberries
  • 1 teaspoon Vanilla extract
  • 200 milliliters Heavy cream
  • 15 grams Powdered sugar
  • 5 grams Fresh mint leaves (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine the small pearl tapioca and water. Let the tapioca soak for 30 minutes to soften and expand slightly.

Step 2

After soaking, place the saucepan on medium heat and bring the tapioca to a simmer, stirring frequently to prevent sticking. Cook for about 15 minutes, or until the pearls become translucent.

Step 3

Add the granulated sugar and vanilla extract to the cooked tapioca. Stir well to dissolve the sugar. Remove from heat and allow the mixture to cool to room temperature.
