Ingredients

  • 4 pieces chicken breasts
  • 4 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces Gjetost cheese (brunost), grated
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat a large skillet over medium heat. Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.

Step 2

Spread the flour onto a plate and dredge each chicken breast lightly on both sides, shaking off excess.

Step 3

Melt the butter with the olive oil in the skillet. Once heated, add the chicken breasts and sear for 4-5 minutes per side, or until golden brown. The chicken does not need to be fully cooked at this stage. Remove the chicken from the skillet and set aside.

Step 4

To the same skillet, add 2 tablespoons of the chicken broth and scrape up any browned bits from the pan. This will add depth to the sauce.

Step 5

Pour in the remaining chicken broth and the heavy cream, stirring to combine. Allow the mixture to simmer gently for 2-3 minutes.

Step 6

Reduce the heat to low and add the grated Gjetost cheese. Stir continuously until the cheese is fully melted and the sauce is smooth.

Step 7

Return the seared chicken breasts to the skillet, nestling them into the sauce. Cover with a lid and simmer on low for 15-20 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/74°C).

Step 8

Taste the sauce and adjust seasoning with additional salt and pepper, if needed.

Step 9

Serve the chicken warm, generously drizzled with the Gjetost sauce. Garnish with fresh parsley if desired. Pair with steamed potatoes, rice, or vegetables for a complete meal.
