Ingredients

  • 500 ml Whole milk
  • 150 ml Heavy cream
  • 100 g Granulated sugar
  • 1 tsp Almond extract
  • 1 tsp Vanilla extract
  • 10 g Powdered gelatin
  • 3 tbsp Cold water
  • 300 g Blueberries
  • 1 tbsp Lemon juice
  • 50 g Granulated sugar (for sauce)
  • 2 tbsp Water (for sauce)

Directions

Step 1

In a small bowl, sprinkle the powdered gelatin over cold water and let it bloom for 5-7 minutes.

Step 2

In a saucepan over medium heat, combine the milk, heavy cream, and granulated sugar. Stir until the sugar is dissolved but do not let the mixture boil.

Step 3

Remove the saucepan from heat and stir in the almond extract and vanilla extract.

Step 4

Once the milk mixture has slightly cooled (but is still warm), stir in the bloomed gelatin until it is fully dissolved.

Step 5

Pour the mixture into individual serving dishes or a single larger dish. Let it cool to room temperature before covering and refrigerating for at least 4 hours, or until set.

Step 6

To prepare the blueberry sauce, combine the blueberries, lemon juice, granulated sugar, and 2 tbsp of water in a small saucepan over medium heat.

Step 7

Cook the mixture until the blueberries begin to break down and the sauce thickens slightly, about 10 minutes. Stir occasionally, gently mashing the blueberries with the back of a spoon. Remove from heat and let it cool completely.

Step 8

When ready to serve, spoon the cooled blueberry sauce over the chilled almond cream. Serve immediately and enjoy!
