Ingredients

  • 3 tablespoons butter
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 3 medium carrots, peeled and diced
  • 4 medium potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped
  • 1 loaf optional crusty bread for serving

Directions

Step 1

In a large pot, melt the butter over medium heat.

Step 2

Add the diced onion, celery, and carrots. Sauté until the vegetables are softened, about 5 minutes.

Step 3

Add the diced potatoes to the pot and stir to combine.

Step 4

Pour in the vegetable broth and add the dried thyme, bay leaf, salt, and black pepper.

Step 5

Bring the mixture to a boil, then reduce the heat to low and simmer for 25 minutes or until the potatoes are tender.

Step 6

Remove the bay leaf from the soup.

Step 7

Using an immersion blender or a countertop blender, puree the soup until smooth. (For a chunkier texture, blend only half the soup.)

Step 8

Return the blended soup to the pot and stir in the heavy cream.

Step 9

Add the frozen peas and cook for another 5 minutes until they are heated through.

Step 10

Taste the soup and adjust the seasoning with additional salt and pepper if needed.

Step 11

Ladle the soup into bowls and garnish with chopped fresh parsley.

Step 12

Serve warm with crusty bread on the side if desired.
