Ingredients

  • 120 grams All-purpose flour
  • 250 milliliters Milk
  • 2 large Eggs
  • 1 teaspoon Salt
  • 30 grams Butter
  • 250 grams Mushrooms
  • 1 small Onion
  • 2 cloves Garlic
  • 120 grams Sour cream
  • 1 tablespoon Fresh parsley
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Black pepper
  • 1 pinch Nutmeg (optional)
  • 30 grams Parmesan cheese

Directions

Step 1

In a mixing bowl, whisk together the flour, milk, eggs, and salt until the batter is smooth. Let it rest for 10 minutes.

Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour a ladleful of batter into the skillet and swirl to evenly coat the bottom. Cook for 1-2 minutes until the edges lift easily, then flip and cook for another 30 seconds. Set crepe aside and repeat with remaining batter, greasing the skillet as needed.

Finely chop the onion, garlic, and mushrooms. Heat olive oil in a pan over medium heat, then sauté the onion until translucent. Add the garlic and mushrooms, and cook until the mushrooms release their liquid and it evaporates, about 5-7 minutes.
