Ingredients

  • 500 grams carrots
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.25 teaspoon ground cinnamon
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 units garlic cloves, minced
  • 2 tablespoons fresh cilantro, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the carrots and slice them into thin, diagonal rounds, approximately 1/4-inch thick.

Step 2

Bring a medium pot of water to a boil. Add the sliced carrots and cook for 5-7 minutes, or until just tender but still firm to the bite. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat.

Step 4

Add the garlic to the skillet and sauté for 1 minute, or until fragrant.

Step 5

Stir in the ground cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook for 30 seconds, allowing the spices to bloom.

Step 6

Add the drained carrots to the skillet, tossing to coat them evenly in the spice mixture. Cook for 3-4 minutes, stirring occasionally.

Step 7

Drizzle the honey and lemon juice over the carrots, stirring to combine. Cook for another 1-2 minutes, allowing the flavors to meld.

Step 8

Transfer the carrots to a serving dish and sprinkle the chopped fresh cilantro on top.

Step 9

Serve warm or at room temperature as a flavorful side dish.
