  • 0.25 teaspoon Red pepper flakes (optional)
  • 2 Scallions (thinly sliced)

Directions

Step 1

Wash the baby potatoes thoroughly and cut them into halves or quarters, depending on their size, ensuring they are all roughly the same size for even cooking.

Step 2

Bring a pot of salted water to a boil and parboil the potatoes for 5-7 minutes until they are slightly tender but not fully cooked. Drain and set aside to cool slightly.

While the potatoes are cooling, cut the bacon into small pieces and cook in a large skillet over medium heat until crispy. Use a slotted spoon to transfer the cooked bacon to a plate lined with paper towels, leaving the bacon grease in the skillet.
